Traditional panna cotta

Ingredients

Whipping cream 500 ml

Gelatin 5 leaves or 8 (leaves or powder)

100 grams of Sugar

Vanilla essence or 1 vanilla pod

Strawberries 450 g

100 grams of Sugar

½ Lemon juice

Preparation

Step 1 : The strawberries should be carefully washed and cleaned, removing the stem and any white parts.

Step 2 : Once cleaned, they are cut into small pieces and placed in a saucepan with the sugar and juice of half a lemon.

Step 3 : The mixture is cooked over high heat initially, then reduced to a lower temperature, and cooked for about 20 minutes.

Step 4 : During this time, stir occasionally to achieve a honey-like consistency.

Step 5 : Meanwhile, the gelatin leaves are soaked in cold water for about five minutes.

Step 6 : In a separate bowl, heat the cream with sugar and vanilla essence until just about to boil.

Step 7 : Remove from heat and add the hydrated gelatin, mixing well to ensure complete dissolution.

Step 8 : Once combined, pour the cream with gelatin into molds and refrigerate for at least two hours until set.

Step 9 : To prepare the coulis, blend the strawberries with sugar and lemon juice, then cook over low heat for about 20 minutes.

Step 10 : Allow to cool before using.

Step 11 : To serve, place a layer of coulis at the bottom of each cup and top with the panna cotta.

Step 12 : The presentation is simple and elegant, perfect for enjoying on any special occasion.
