280 milliliters of Water
2 grams of Fresh yeast
280 grams of Bread flour
120 grams of White flour
10 grams of Olive oil
10 grams of Salt
270 grams of Tomato sauce

1 pinch of Salt
250 grams of Mozzarella

Preparation
Step 1 : To begin, both flours should be sifted to ensure they are well mixed and free of lumps.
Step 2 : In a large bowl, place the yeast and dissolve it in all the water, stirring with a wooden spoon for a couple of minutes until you get a smooth, homogeneous mixture.
Step 3 : Add initially 250 grams of flour to this mixture, mixing again with the spoon until a uniform texture is achieved.
Step 4 : Then, incorporate the rest of the flour, the oil, and the salt.
Step 5 : Using the spoon, mix all the ingredients until they start to come together, then work it by hand, holding the bowl to make it easier to handle.
Step 6 : The dough will be quite sticky, which is normal, so it's advisable to wash hands thoroughly before handling it.
Step 7 : Lightly oil a large work surface and turn the dough onto it.
Step 8 : If your hands are greasy, it will be easier to prevent sticking.
Step 9 : Knead the dough for approximately 5 minutes, stretching and folding it over itself several times.
Step 10 : Hold a part of the dough with one hand and gently stretch it with the base of the other, then fold it, repeating this process several times.
Step 11 : As you do this, you'll notice how the dough incorporates air and becomes more elastic.
Step 12 : Next, oil a clean bowl and place the dough inside.
Step 13 : Cover with a clean cloth and let it rest for about 15 minutes.
Step 14 : After this time, the dough will appear smoother, more elastic, and less sticky.
Step 15 : To improve its structure and aeration, you will conduct fold sessions: gently stretch the dough and fold it over itself, then turn it over so it is vertically positioned, and repeat the same fold.
Step 16 : Return it to the bowl and cover again with the cloth.
Step 17 : Repeat this process two more times, each 15 minutes apart, with gentle movements.
Step 18 : After completing these folds and rests, place the dough back in the bowl, cover tightly with plastic wrap, and let it rest at room temperature for about 2 to 3 hours.
Step 19 : Finally, transfer it to the refrigerator, placing it in the coldest part, where it should remain for a minimum of 24 hours.
