Seafood Pasta

400 grams of Long pasta
20 Cherry tomatoes
200 grams of Mussels
1 Squid
8 Pink shrimp
200 grams of Shrimp
Parsley
Oregano
½ cup of White wine
4 Garlic
1 pinch of Salt
Olive oil
Red pepper flakes
Preparation
Step 1 : The process begins by cleaning the shrimp and cutting them into rings, making sure to remove any shells or impurities.
Step 2 : The squid should also be cleaned and sliced into rings.
Step 3 : The mussels are carefully washed, removing any algae filaments that may protrude between their shells by pulling gently downward.
Step 4 : Then, halve the cherry tomatoes.
Step 5 : In a tall pot, boil at least four liters of salted water to create a base for cooking the pasta.
Step 6 : In a wide skillet, heat half a cup of olive oil and sauté two crushed garlic cloves until fragrant.
Step 7 : Once the garlic is ready, add the squid and cook over high heat.
Step 8 : Stir constantly until the squid turns whiter, then add the cherry tomatoes.
Step 9 : Cover the skillet and cook over medium-high heat for about two minutes, stirring occasionally.
Step 10 : Next, add white wine and let it evaporate.
Step 11 : Sprinkle with oregano and chopped fresh parsley, and if you like a spicy touch, add a red pepper flake at this stage.
Step 12 : Continue cooking over low heat for approximately five minutes.
Step 13 : Once ready, add the mussels.
Step 14 : Cover again and cook for about two minutes until the mussels open.
Step 15 : Then, add the shrimp, cover again, and wait another minute until the shrimp change color and all mussels are open.
Step 16 : In the final moments, add the pink shrimp to warm up in the nearly finished sauce, sauté for about 30 seconds before removing from heat.
Step 17 : At this point, the water for boiling the pasta should be boiling.
Step 18 : Add the pasta to the boiling water, cooking over high heat without a lid for the time indicated on the package minus three minutes, aiming for al dente.
Step 19 : It is important to reserve some of the cooking water before draining.
Step 20 : Then, return the skillet with the seafood to the stove, adding a spoonful of the reserved water.
Step 21 : Mix well, and when the sauce starts boiling, add the cooked pasta.
Step 22 : Sauté for about two minutes, adding more cooking water if the pasta absorbs too much liquid, to keep the sauce thick and flavorful.
Step 23 : Finally, distribute the seafood and sauce among the portions, garnishing with chopped parsley before serving.
