Potato, Artichoke, and Ricotta Tart

Ingredients

800 grams of Starchy potatoes

12 Artichoke

300 grams of Ricotta

200 grams of Raw ham

1 Garlic clove

1 Organic lemon

2 Fresh thyme sprigs

1 Rosemary sprig

2 Sage leaves

2 Basil leaves

2 Parsley bunches

1 Small bay leaf

Olive oil

1 pinch of Salt

Black pepper

Bread crumbs

Grated sheep cheese

1 pinch of Pepper

Preparation

Step 1 : Start by washing the potatoes and cooking them until they are very tender.

Step 2 : Meanwhile, clean the artichokes, slice them, including the stems, and place them in water acidulated with lemon.

Step 3 : Then, mash the potatoes with a special kitchen tool and mix with crumbled thyme, salt, pepper, and a little olive oil.

Step 4 : Next, cut the ham into cubes and set aside.

Step 5 : In another bowl, stir the ricotta with chopped aromatic herbs, salt, pepper, and a little olive oil, mixing all ingredients well.

Step 6 : Grease a baking dish with olive oil and sprinkle with bread crumbs.

Step 7 : Place half of the mashed potatoes on the bottom, followed by half of the artichokes, ham cubes, chopped garlic, parsley, and a bit of oil.

Step 8 : Spread the ricotta with herbs, add another layer of artichokes and ham, chopped garlic, parsley, and oil.

Step 9 : Finally, pour the remaining mashed potatoes on top and sprinkle with grated sheep cheese and bread crumbs.

Step 10 : To finish, bake at 180°C for 30 minutes or until golden.
