Pork Arm Roast with Potatoes
Ingredients

800 grams of Pork arm roast
500 grams of Small potatoes
1 Carrot
1 Celery stalk
1 Small onion
1 Garlic clove
1 pinch of Salt
60 grams of Extra virgin olive oil
Sage
2 Rosemary sprigs
150 grams of Water
1 cup of Red wine
2 Bay leaves
1 pinch of Pepper
Preparation
Step 1 : The aromatic herbs are washed and dried with kitchen paper, then finely crushed and set aside.
Step 2 : Wash the potatoes with plenty of water and cut them into small, uniform pieces.
Step 3 : In a blender, place the carrot, garlic, celery stalk, and onion, then blend until finely chopped.
Step 4 : In a deep skillet, pour in oil and prepare a sauté with the vegetables over very low heat.
Step 5 : Remove any visible fat from the pork arm roast, and once the sauté is ready, add the meat and brown it well on all sides, turning it several times with a kitchen spatula.
Step 6 : Season with salt and pepper, add the crushed herbs and bay leaves.
Step 7 : Add the wine and let it evaporate, then add water to prevent the meat from drying out.
Step 8 : Add the potatoes and let them cook over moderate heat for 10 minutes, covering the dish so the potatoes become soft.
Step 9 : Turn the meat during cooking to ensure even cooking.
Step 10 : Once the roast is cooked, transfer it along with the potatoes to a ceramic oven-safe dish and bake at 200°C for 45 minutes.
Step 11 : If the roast dries out too much, add a little water and turn it occasionally until fully cooked.
