Pasta Carbonara
Ingredients

320 grams of Spaghetti
3 Egg yolks
1 Egg
100 grams of Pancetta
50 grams of Grated Pecorino cheese
1 pinch of Black pepper
1 pinch of Salt
Preparation
Step 1 : Cut the pancetta or guanciale into small cubes and fry in a skillet until golden and crispy.
Step 2 : Meanwhile, in a small bowl, whisk the egg yolks, the whole egg, grated Pecorino cheese, and black pepper until you get a creamy mixture.
Step 3 : Cook the pasta in abundant salted water until al dente, and set aside a little of the cooking water.
Step 4 : Drain the pasta and add it to the skillet with the golden pancetta, mixing well to absorb the flavors.
Step 5 : Then, remove the skillet from heat and quickly combine the pasta with the egg, cheese, and pepper mixture, adding a bit of the reserved water to achieve a creamy, well-integrated sauce.
Step 6 : Serve on individual plates, sprinkling more Pecorino cheese and a few twists of black pepper to taste.
