Fregula with Clams
Ingredients
300 grams of Sardinian fregula
1 Bag of clams
300 grams of Chopped canned tomatoes
2 Garlic cloves
Chili
Parsley
Wine
Olive oil
1 liter of Vegetable broth or fish stock
Preparation
Step 1 : Place the clams in a bowl with salted water for two hours to fully purge.
Step 2 : Then, put them in a large pot to open, grind some and set aside a few whole for decoration.
Step 3 : Save the cooking water.
Step 4 : In a pan, fry the garlic and chili in oil.
Step 5 : Add the wine, the clam water, parsley, and tomato, seasoning to taste.
Step 6 : Incorporate the fregula and gradually add broth.
Step 7 : Once the fregula is almost cooked (about 15 minutes), add the clams and remove from heat.
Step 8 : Garnish with parsley and some whole clams before serving.
