Ingredients

1 Eggplant

500 grams of Peeled tomatoes

1 Onion

Sheep cheese

400 grams of Pasta

Sugar

1 pinch of Salt

Preparation

Step 1 : To start, the eggplant will be cut into approximately 2-centimeter cubes.

Step 2 : These cubes will be placed in a colander with salt and left to rest for 30 minutes, allowing them to release excess water and bitterness.

Step 3 : After that time, they will be well rinsed and carefully dried.

Step 4 : Meanwhile, the onion will be sliced thinly and sautéed over medium-low heat in a pan with a little oil, until translucent and slightly golden.

Step 5 : Next, chopped tomatoes will be added in small pieces, along with a teaspoon of sugar and a pinch of salt.

Step 6 : This mixture will be cooked over medium heat for about 20 minutes, allowing flavors to meld and the sauce to thicken.

Step 7 : While the sauce cooks, the eggplants will be fried in hot oil until golden.

Step 8 : Once fried, they will be added to the tomato sauce and left to rest a few minutes to blend the flavors.

Step 9 : The next step will be to cook the pasta in plenty of salted water until it reaches an al dente texture.

Step 10 : When ready, it will be drained and mixed with the eggplant and tomato sauce, ensuring it is well coated.

Step 11 : Before serving, it will be sprinkled with grated sheep cheese and decorated with fresh basil leaves, adding an aromatic and visual touch to the dish.
