Carnival Lasagna
Ingredients
500 grams of Fresh lasagna sheets
500 grams of Ripe tomato sauce
1 tablespoon of Concentrated pomodoro
1 Medium onion
6 Eggs
250 grams of Chopped veal pulp
250 grams of Chopped pork meat
2 Garlic cloves
1 tablespoon of Chopped parsley
400 grams of Breadcrumbs
400 grams of Ricotta
Grated caciocavallo cheese
Olive oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To prepare this recipe, first hard-boil 4 eggs.
Step 2 : Meanwhile, start preparing the sauce.
Step 3 : Bring the tomatoes to a boil, peel them, remove the seeds, and cut them.
Step 4 : You can also use peeled tomatoes, making sure to remove the seeds and mash them with a fork until you get a pulp.
Step 5 : Then, finely chop the onion and sauté it in a pan with olive oil over very low heat.
Step 6 : Once the onion is almost transparent, add the chopped tomato, tomato paste dissolved in a glass of water, a pinch of salt, and cook for at least an hour, adding warm water if necessary to keep the sauce smooth.
Step 7 : While the sauce cooks, you can prepare the meatballs.
Step 8 : Mix the two meats with the two beaten eggs, grated cheese, chopped garlic, and parsley.
Step 9 : If needed, bind the mixture with some breadcrumbs.
Step 10 : Form meatballs about 1 cm in diameter, roll them in breadcrumbs, and fry until golden.
Step 11 : Once cooked, drain them on paper towels.
Step 12 : To finish, mash the ricotta with a few tablespoons of hot water and chop the hard-boiled eggs.
Step 13 : Then, assemble the lasagna.
Step 14 : Preheat the oven to 180°C, pour a little tomato sauce on the bottom of a baking dish, and layer lasagna sheets, followed by ricotta, eggs, tomato sauce with meatballs, and grated cheese.
Step 15 : Repeat this process until the top layer is of caciocavallo cheese.
Step 16 : Bake the lasagna for 40-50 minutes until golden on the surface.
Step 17 : Once done, let it cool down slightly before serving.
